April is National Grilled Cheese Month. Enough said? I agree! This one's all about the grilled cheese recipes, and oh, does the Internet have us covered. If my search is any indication, grilled cheese sandwiches--and all variety of riffs on the classic--are among the most posted food. Ever.

Giving nachos an everyday twist, I present thee with the Loaded Nacho Grilled Cheese (above) from BS In the Kitchen. Beans, avocado, jalapeños, oh my. One note, though: this recipe calls for smashed Doritos. I cannot tell a lie: it sounds yummy. But I can assure you that this sandwich will taste just as good without them, if nacho-flavored corn chips aren't your thing.

 

For a more refined version, I love this Grilled Cheese with Fig Butter and Arugula from Lemons and Anchovies. And I love even more that it's made with a fig butter from Trader Joe's. Refined; but it's still laid back, just the way grilled cheese should be. If you can't find fig butter, apple butter from your local grocery store will work just as well. 

 

Brussels sprouts and bacon are one of my absolute favorite combos, so it's no wonder I'm digging this Brussels Sprouts and Bacon Grilled Cheese from Now Stir It Up. Between the shredded sprouts (which makes them soft and easy to eat), melty cheese and smoky bacon, this sandwich might even turn the brussels sprouts haters in your life into believers. 

 

This Ham and Broccoli Grilled Cheese Sandwich from Bakeaholic Mama is a perfect quick comfort food meal for little ones; the classic trio are irresistible all sandwiched up. Carrie serves her recipe to her own little ones for lunch, but I say that it makes a great easy dinner, too. And not just for the kids.

 

I love cocktail parties and you know why? Cheesy spinach artichoke dip, that's why. The party staple is one of my great pleasures and now, thank to this Spinach and Artichoke Grilled Cheese from a Couple Cooks, I can celebrate any day I want, party or not.
